BBQ Tofu sandwich and Apple Slaw

Just because I'm going to sit down and watch the ProBowl doesn't mean I have to eat junk! Tonight I made a great dinner with very little effort. BBQ and slaw go great together, but they often get boring and don't really have a lot of nutritional value.

Add some new flavor to this old favorite combination while staying healthy at the same time,


For the sandwich:
-Whole wheat buns
-15 oz. firm tofu
-BBQ sauce

-Drain tofu and cut into 1/2 slices (about six)
-Press tofu for at least 15 minutes
-Put a small amount of vegetable oil in a glass dish (9x13) and place tofu in it
-Flip tofu to make sure both sides are coated with oil
-Broil on high for 12-15 minutes, take out and flip, then broil other side for 10-12 minutes
-When done lay two stips of tofu on a bun and cover with BBQ sauce

For the slaw:
-5ish cups of cabbage slaw mix
-3ish cups of shredded purple cabbage
-2 cups plain greek yourgut
-1 tbs apple cider vinegar
-2 tbs celery seed
-2 tbs mayo
-2 tsb agave nectar
-2 green apples sliced thinly
-1/2 cup golden raisins
-1 tsp black pepper

Mix everything together and chill for one hour
